I think having the bullets made the game a bit too easy, and I could ride into barrels without any consequence.

Have you tried clicking on obstacles during the game?
You had to add shooting into it didn't you. Now look what happened to all the barrels! :P
Nice theme implementation. The game is well rounded with good sounds and effects and was fun to play, nice job :)
