I have about ideas for the leveling system from different games and what I've read from web novels:
1. Level Up by choice, like gathering EXP and then level up outside of battles.
2. A "fake" Level Cap, EXP will just accumulate in ridiculous amounts, like a mountain of junk EXP at the end-game content.
3. Throw away every excess EXP, the level cap is absolute and will not take more than the cap itself.
The 3rd option probably came from MMORPGs where equipment and skills become the best character builds, PVP stuff.
Just tellin' these while I can remember that I had read a lot of fantasy in the past.
