are we ever gonna be able to still progress relationships with the girls even though their story is finished? what i mean is take ebiko for example i finished her story but only got her to lover will it be possible to progress the relationship to soulmate in the future? since id rather not revert back to save where i dont have anything

Yeah, I plan to add dating after their stories so that you can raise their friendship level further, but it might take a while to get that in place.

so do the girls we randomly meet are they lock at just friends or is there a way to make them lovers cause i have one girl named hasumi but she stuck on friend how do i get her higher

You can raise all random NPCs to Soulmate level.

To get past the Friendzone you need to complete a date successfully with a kiss and a gift.
