If that doesn't work you can also edit GameUserSettings.ini in %localappdata%\VotV\Saved\Config\WindowsNoEditor\
Changing these lines should do it:
ResolutionSizeX=1440 ResolutionSizeY=1080
I've personally had to use this method as an alternative due to running the game in a window.
