In bossfights using drain essence isn't always the best choice. Using magic or a good old double-attack works better!
It is possible to win every single fight with essence drain, but you've got to grind a lot of levels even when you've reached max height to spec into her defense (and essence drain levels each time you grow, even if your maximum height is reached). I played it that way and it was really fun.
