At this stage of the game you only need to send a mining fleet to a system using the star chart, than when it arrives to the system it automatically starts depleting the systems resources at a rate dependent on how big is your fleet and what retrofits you installed on the mothership.
You can take a look at from the mining report menu when selecting a mining fleet which details the fleets mining capacity as in the maximum number of materials it can extract each turn, as well as a break down of the kind of materials it had extracted up too the last 10 turn.
Mining using a fleet is an automated random process meaning each turn the yield of any kind of material is randomly calculated adding up to the maximum mining capacity, you may notice that when a system starts to be depleted less and less of the rare materials are extracted per turn, hence you have to make a decision whether to stay or send it to another less depleted system.
The other method of mining is related to your colonies, there is a tab called resources which show what kind of materials are found on a planet and if you have a colony there then you can mine at a rate indicated in units per certain amount of industrial development, it is again an automatic hand off process you only need to increase the colony's industry to increase the amount of resource yield per turn.
In the next update there is coming a global exchange menu, where you can buy or sell off you resources at a price determined by demand.
Aslo, in the future mining stations, defence satellites are coming and then you will also be able to place them and view them from the inspect solar system view, which feature is right now lacking, you will also be able to see your fleets and shipyard that are in orbit of the inspected system.
