I'm just a fellow jam participant but I would say this: If you're not registered for the jam through itch then there is no way to appear officially in the jam (and nobody can vote for your game, etc.), and the voting period is almost done anyway. Though based on what Otto has said in Discord it seems like there are really two competitions here: the itch.io jam itself and the judging/playing done by the judges on stream. It looks like your game was indeed uploaded on itch before the deadline so it seems fair to at least consider it for the second part of the competition. For what it's worth your game looks pretty neat.
