I think the main thing was that the gun was offset from the rotation slightly. Once you got used to it it was fine but at first i kept trying to adjust to where the gun was rather than where it was going to turn to. I would say if the actual edge of the gun could touch the rotation point that would help that problem, or have some visual of the rotation point.

Ok so The reason for that was, that I didn't make it framerate independant. :/ Beginner mistake
