Oh come on, you know these workarounds are imperfect solutions and are a showstopper for many customers. And sometimes even the gifting does not work (you need to have a trustworthy friend for this to work in the first place) because there are geo restrictions in place or the so-called "store region" (in Steam) is wrong. And in some cases you even have a IP check / block in place, i.e. you cannot activate the steam key on a German account even if you have managed receiving a working/legit steam key for the game. Thus, you should at least set up a way to directly purchase a "Steam key + DRM free Download"-scheme from a "developer website" in the next months, if itch.io is so complicated about getting the Desktop Version sold here (or is Steam being the bitch here?). I think the RIMWORLD developers are doing something like that (google them please - https://rimworldgame.com).
A more generous approach would be a "Seeds of Chaos"-like approach. They are selling the game on Steam and are offering the (full/premium) version for free on itch.io. I supported them by purchasing on Steam anyway (I was a first time buyer and I was lucky because the "adult only"-blocking policy on German Steam Store was not working at that time).
A question:
If you have bought the version on Steam, can you also get the android version as a supplement OR do you need to purchase the game twice (once on Steam, and once on itch.io)? Maybe offering the android files as a free Steam DLC or through workshop would be a sensible thing to contemplate. How about that?
