I spent the entire last day trying to fix the build, unfortunately, no matter what I did, it wouldn't change anything. I made the camera faster, no change. I made the knight slower, no change. So, unfortunately it just seemed to have been bad luck with me choosing my Unity version, as that one has some build issues and I did not have enough time to download a new version by the time I figured it out.
