Mana shield, invisibility, rat talismans, skeletons, demons, spells that don't miss are all good choices. The most basic, cheesy option is invisibility and conjure skeleton. Have the fairies waste their mana on skeletons and do not attack with your hero. Simply summon more minions. After that, finish them off.

Wouldn't call any option the best. It's easy to win, but if you wanna score the most points, then fight the 2nd and 3rd battles.

2nd is easy and you have to try to fail it. 3rd might be difficult. But invisibility and mana shield should solve the problem.
