Thanks for the great feedback. I think the procedural was due to time constraints. Given more time I will probably be able to come up with nice level ideas that I can try out and balance against each other. I have plenty of ideas already for mechanics, level structures etc. so I might stick with it actually and turn it into something more.

I completely under stand the problem of a good level desing for a jam game. But you did it well, as you made a fine difficulty curve.
