You can put the head, or a part of the limb into the trash, so when you cut a limb into 2 pieces, you can put one of them in the trash and then carry the trash bag to the door, where you can bring them out. The bones meter is indeed about how much of the body is left, and you win when it goes to zero, unless the suspicion meter gets full before that. Also, if you have body parts in the fridge and the freezer, it slows the rate of which the suspicion meter rises as the time goes by in the game.
