Very briefly, after skimming your questions:

You can change any details any time, including the title and URL
It makes no sense to put your project name in the tags, why would you do that?! But you can add any tag, not just those suggested by the system.
The custom noun is used to make itch.io refer to your project as something special, such as an "interactive experience".
