I really liked this game, though when I finished it I didn't have all the compounds in the gallery, so I clicked New Game again which resetted all of my gallery

Hi Mugon, first of all I want to thank you for playing our game. We are really happy to hear you liked it!
About the compounds you didn't have unlocked after finishing the game, those are secret compounds. Compounds that can be made with the elements which appear in the game but whose discovery isn't the goal. We added them as little easter eggs in case someone found them by chance!
However, you are right that in case someone desires to complete the gallery the way the New Game works makes it more tedious. This game was developed for the Legends of Learning platform. As clients they didn't want any replayability, so a New Game + button which would let you play the game again while carrying over your progress was never implemented.
