Honestly I had no clue that interacting with the chests would open them, might want to make a prompt appear over the chest when you approach it to hit the interact button.
I'm impressed at how easy it is to miss things like this. It's something fairly easy to make, I just never gave it too much thought. That's why it's so helpful to hear from everyone. Thank you!
