You can change the pose only in Normal-Mode for now (customization menu). Only one pose for each character is available in Sex-Mode for now. With new updates the poses will be added.

it's really weird. I just double-checked and everything works for me. Left side of the screen for camera movement, right side for rotation. 

You have to touch the screen outside the character.
