You can actually get it to run. 
You'll need an app called Whisky from Github.
It is notarized by apple and use it to run the windows version on Mac. 
The settings are: better v-sync disabled, dxvk enabled and windows 11 as platform. 
The installation is pretty straight forward, would be great, if this was listed as a option on the itch.io page.
You can also use crossover if you want to spend money.

Best game I have played from itch.io.
