Great game feel and great take on the theme! This has a fair amount of depth as you try for a high score.
After several attempts, I was still not sure what the best thing to do was after killing too many sheep where it was then BELOW the needed count. Clearing out the pen after that point seemed like the best thing because it would then spawn a new wave of sheep, but I thought I heard you say during the game jam livestream that clearing the pen makes the BIG SHEEP spawn as a punishment, so that confused me.
Simple FPS game with lots of stuff working to great effect: sound effect for sheep barely missing you, muzzle flares to help spot distant sheep, sheep in sniper position is just silly to begin with. I could tell some thought was put into the level design and sheep placements: trying to pick up ramen from one sheep puts you in the line of sight of another. I get near the end of the first level thinking "man, I'm still missing 4 sheep", I turn around the last hedge and BOOM! I laughed at the intro! (Didn't play past the first level, but I'm curious how far you made this one.)
Cool risk/reward in this game between keeping the light off to restore your meter and letting ghosts get closer, or keeping it on to shoot ghosts. Some neat lighting effects: I like the LED clock being visible on the shelf at all times, and I like the ghosts being barely visible in front of the moonlight window.
The total time you need to survive seems a bit long (6 minutes), but mixing up the ghost patterns at some point or ramping up the gameplay in some other way could break up this time into more memorable sections (rather than just speeding up the clock).
I just barely missed making it to 3AM.

I can see some level design depth starting to take shape in this one, especially once the 3rd sheep gets fully implemented! The sheep move kind of slow overall, and it's not clear sometimes which switches are linked to which platforms so restarts were common for me and it would take a while to get back to the same spot.
It would be cool to see the "slower sheep" get a unique trait of its own. Right now it just seems worse overall than the horned sheep but maybe that's the point.
Very nice, "painterly" pixel art, but some elements blend together (buttons/switches).
Nice. This is my tree around 1000 points. Then I tried to cut down the entire tree. It turns out that doing that is much, much harder than keeping the tree from reaching the edge as all the branches become microscopic! https://imgur.com/a/E040vUo
