Since I only had the time to make the game work with a single control scheme, I decided to go for the easier option (but also the more accessible one for the majority of people) which was to have the opponent’s side be automatic. That also gave me the idea to make this nice automated title screen which was a bonus. I am definitely going to try to adapt the game to be playable by 2 non-AI players at some point in the future.
Thanks for playing my game! As I have mentioned in one of my comments below, my game is FAR from finished. It is just what I had the time to make in the last day and a half/2 days of the game jam. There are many things that still need to be polished like the values and math behind the movement of objects (that is what is causing the game to be challenging to play), there are still no assets except for the font, sound is non-existent, there is no win condition and so on. I will get back to this game and improve it once I get some free time again. To answer your question after enough attempts I have managed to consistently out-score the artificial opponent (which doesn’t mean the game is balanced but that it was at a playable enough state for me to submit it).
By the way, I checked out the game you've made ("A dog's life") and it was quite nice. The 3D screen transitions really caught me by surprise. Good job! :)

And yes, I can 100% agree that the values for the movement speed of certain objects like the ball, paddles and projectiles still need some fine-tuning before I can create an enjoyable gameplay experience that is neither too challenging nor too easy. (But maybe I should think about adding a win condition first. Otherwise, game journalists will start calling it "The Dark Souls of Pong" because they can't complete it :P) At its current state, this game is a little rough around the edges (to say the least) but it is probably going to become one of those projects I will return to every now and then to make some improvements whenever I have the extra time.

I was thinking of adding some sound/visual effects but since I started making this game 2 days before the GameDev.tv Game Jam was about to end I didn't have the time to do so. I will definitely return to this game at some point to add some more polish to it once I learn more about game development and asset creation (I want to at least be able to create the most basic of assets so I can prototype games more easily). For now, this game is only a prototype of an idea I got when I looked at the theme of this year's game jam.
