I'm not sure you are on itch anymore. But if you come back, don't stop. Pursue the dream. I develop on Linux and occasionally Windows. I avoid high entry costs and proprietary stuff. But Mac has similarities to Linux. RGBDS and BGB are a rough route. Renpy might be a good intro for gameboy looks and you could create sprites and an interface that is gameboy green. Good luck.

Well if I need a resume, I know the basics of Gimp, Audacity, Python, and Game Maker Studio (though it's been awhile for GML). As well as smattering of other things that might be helpful. I mod resources and hex edit Secret Maryo Chronicles constantly. I do best when assigned a task or asked for help. I'm commonly the makeshift member of a team. Tell me if you want another member.
I'm new to this. Never done a jam before. I don't have a degree. I'm not a world class coder. I'm a scripter, a code copier. I'm going to attempt making an actual rom. I'm not sure how much more difficult the route. But I'm determined to go full retro on this.
Problem is I'm not sure how I would create a game this quickly.
Anyone want to spout helpful (read as constructive) info to the newbie?
