I think you can update since they accept multiple games submission. 

But good question, would love to know as well (for ex. if it was 3 different games submitted, which one is selected? Only the last submission?)

• For team formation, does every members have to sign in with their itch.io accounts and join the jam to be considered? Or one joined account per team for file submission is enough? What if a teammate works with different teams or going solo at the same time?

• Are there limitations on using public / license-free assets (3d props, music, etc.), Or assets have to be created from scratch?
