Personally when I play old style racing games and other top down racers I always select left/right steering which is pretty much if you turn the stick left you go left in relation where the car is facing and if you turn it right it turns to the right in relation to where the car is facing
I get this doesn't work great with the acceleration but maybe you could assign it to a button or something cause I find it really tedious to use directional steering
super amazing game by the way! I love it
