is very nice idea, i have sean same type on bilibili(chinese youtube),link(is not game but you can use it to make them) in this at the end of evey scenes you need to make choose and your choose will affect on what will be after.I think if you use translate you will fastly learn it.(i think it is better than Youtube).
can i use assets that i buy? "All your assets you use must be yours," like i buy it and it is mine??? and same question about music from freesound it is cc0(Creative Commons 0)
