I and a few friends are part of a modding group, and we have an organisation on GitHub. We decided to participate in this year's GameOff and I wanted to know how the competition works for teams, especially on itch.io.

Idk how that works in godot but with other engines, there are libraries or extensions that can handle that or if you really want to go the "painful but classic way", just play a frame, capture it as a screenshot then go onto the next frame until the game ends then make a video out out it. Idk how audio would get taken into account with this method tho. honnestly if the game was made in Unity (that's the only thing i have experience modding) i would have liked to make a mod that exports replays in video

Oh no problem, it wouldn't be hard to add an endless mode to my game, i would just need to make the song longer and loopable (if i don't decide to just take a royalty free song somewhere). At worst it would take a few hours 

It won't be available by default, you'll have to either beat the game or do it with a high score, i haven't thought that far yet. Point being it will be an "Extra"
