They seem to pay about the same amount for each. Can we go to any map we like or do we have to go to a specific one to see specific ghost?

Ghost pool depends on how many maps you have unlocked. For example, if you have 2 map unlocked first 5 ghosts are randomly chosen. If you have 3 then first 7 ghosts. It's doesn't matter what map you unlock first.
