Using quest 2 and steamvr I downloaded the pcvr version and loaded in perfectly fine, controls seemed to be working but I assume there's some way to spawn kaiju or open some sort of menu and I just can't use it

That's strange, did you try the left menu button? That bring up the menu that allows you to spawn the Kaiju
