Can the start and select buttons be used for anything or are they reserved for the menus?

I guess you'll need a pause button. But in principle no, you are not obliged to any button fulfill any specific function.

If you don't want the d-pad to be for walking, it doesn't have to be. Take advantage of all limitations. Have fun.
