You can't change the game, but you can change the itch page. So as long as the game file isn't changed, you're free to change the page's description, screenshots, thumbnail, etc.
There is a tiny window after the submission deadline that people can get support if something breaks or they had trouble submitting their game. But that window is closed now, and games are locked in for the duration of the voting period.
