Yeah, the judges only want to see the version you submitted at the end of the jam. If for whatever reason you want/need to update it it's best to upload that new version as a separate file with a different file name ("post jam version" or whatever) so that normal players can pick which one they want to look at and the judges still have access to the original file. Once the winners have been announced then you can do whatever you want to.
