Is there anyway to restart but keep the unlocked spells from the end game?
there community voted on patreon for endgame difficulty as skulls like in Halo instead of a New Game+ type of end game. So currently there is nothing to do like you want, apart from tweaking your save file. It's in appdata

Try using different spells with a different damage type than what you’re using.
If I remember it’s immune to magic damage but physical damage will hurt it
