Hey, is there any way to know how many chapters there are in each girl's story? I've just got as far as you can with the main storyline and am trying to figure out how many hours of gameplay are left to me.

Since the game is still in progress, it's hard to say how many chapters are left and whatnot.
If you're wondering how far you've progressed so far, you can check the quest log and head to the "completed" tab!

These are the max "story" numbers for each girl as of v.0.7.8...
There are a number of other side story arcs, too, of course. HTH.
