Not saying to not make your own assets, just that it can be helpful when you don't have to make every single one or that you can use placeholders assets to flesh the game out and come back later to fill in with custom assets if so desired.
Thanks for your comment, I think I mostly enjoy making assets rather than the programming/sound parts of game creation. I totally agree with you that a week is very short, especially for one person with other responsibilities, on the current gmtk I actually got myself a programmer, so alongside the design I dont have to do as much programming :) I definitely enjoyed learning everything while making my first ever game and I believe I learned a lot ^-^
