My own setups were digital, I used clip studio paint to assemble my maps.
Previous iterations had me using base maps made with Azgaar's fantasy map generator. I've had the mode set to biome or pure landmass. I'd take a screenshot, put it into clip and then overlay a square grid and hex grid. Clip has an asset store so I used these two asset packs: https://assets.clip-studio.com/en-us/detail?id=1875352 and https://assets.clip-studio.com/en-us/detail?id=1927298. The grids auto tile to span the canvas and can scale up and down.
Then I'll paste my images in mask them to fit within the hexes, a little fiddly but I like the results.
