is there a way to have more npc's on the screen or even have it where you can only have a certain amount of people be feline or a certain amount be human?

In setting youbcan find an NPC setting called, I believe, "Pawn amount", which allows you to set the amount of pawns present on the map. I have mine set to 50, but honestly I think like 70% of them are guards and nurses who don't leave their areas of the map, so that also limits the amount of characters you will find without breaking rules.

As for your previous question, no, I do not think so.

In game their is a button called me click it then click encounters then you can limit what you can encounter.

Npcs spawn over time and reach spawn limit on day 6 so maybe give it some time. You also can change the pawn limit amount in options but the more you add the longer it takes to load. I tried 10,000 pawns and it took over 3 hours to just reach the stocks from my cell.

You can change gender and species in: me, encounters and there you can change genders and species. After that you can go to characters and search for those characters you don't want in your run and forget them so that they don't appear anymore. I hope this helps
