As far as I can see, there is no way to edit or delete blocks once you create them.  There is also no way to delete a project.  If I accidentally make a block incorrectly there is no way to fix it. I just have to live with a useless block in my toolbar.  It would also be cool for the toolbar to allow you to organize it.  For example, being able to keep the basic logic separate from more complicated blocks like adders or latches.

While yes there is no official support for that yet, a solution for that is to go to "%AppData%\LocalLow\Sebastian Lague\Digital Logic Sim\SaveData\" and there you can find your projects and the chips you made in them.
