I always wanted to create a point-and-click adventure game (think King's Quest V), and a 2-button style kart racing game, so for my entry I did a little mash-up tried to do both.
I didn't use an engine, however I did use a phixelgator python script to convert background scenery images into pixel art. Foreground elements were more rushed out, wish I could have done pixel art for those!
