The sweet, savory and sour components are decided by the type of dish you serve the jam on (pancakes, cheese board or yoghurt). I've noticed a bug where every failed taste check uses de dialog "this is not sweet", unfortunately I will not be able to push an update fixing this until the rating period is over. That update will also add a little tutorial explaining each of the parts of the orders.
You are absolutely right! I should've make the jar transitions on click. I might add that.
