(Yes it can feel highly unnatural to take your eyes off the aircraft in the sky. When flying in real life, I think it is a lot easier if you're using goggles rather than looking at a screen. Then you don't have choice but to commit to the FPV view, less risk of getting confused/distracted).
There are two versions of the simulator - FPV Freerider (Classic) and FPV Freerider Recharged.
FPV Freerider classic has the desert scene that Bardwell is using in his tutorial series.
(There is a free demo version available that has the desert scene in it).
