Yes, just copying the saves folder from inside the ‘game’ directory and putting it back in the same place on any other version will keep all your saves on Windows, unless at some point the save data changes format and everyone is forced to start over.
I can’t speak for any other OS. Someone else will have to chime in if thats the case.

NOTE: If you’re running Android 11+ then Google has hidden your data folder. To access it you need to connect your phone to your PC with a USB cable or use an app like Solid Explorer or X-Plore to give you access to the folder again.
