The stats will be transferred via "data crystals," a file that Chapter One will automatically write out on on finishing the chapter (once it's modified to do so). You'll then take that file, put it in the folder for Chapter Two, and it will automatically read the file and ingest the stats. A little clunky, but the best RPGMaker can do. There will also be an option to start Chapter Two with "default" stats if you don't want to bother, but you will miss some content this way.

Gallery is low-priority: I'll probably add it eventually, but much further down the line. Galleries make sense in games with larger CG sets, but these games are fairly small and scenes are easy to get to with the combination of a guide and a little save scumming at decision points. Chapter Two will be larger, but not 20 Event CGs larger. Plus if you just want to look at the pics, they're there in the folder, not encrypted. 

And nope. Like to keep it under wraps until it's ready to go, though I may share a tiny bit here and there just to show work is being done. Don't like the drip-feed, it ruins the fun when a game finally comes out and you already know 50% of it. Believe me, it's hard for me to wait too, but it will be more fun this way.
