In the case of Asteria specifically she was originally designed by a very talented character modeller called "Zolla" (who also did Roxy's design), who designed her after the Behemoth from Final Fantasy :)
As for the other characters, inspiration was drawn from different places depending on the person, and a couple (Jackie and Viola) were actually designed on livestream based on player input!
