I finally found a solution thanks to another thread, you have to use the pegasus boots + sword on him. No idea why that's the only way of damaging him in this version.
This saved my run. After a few previous bugs also made progression difficult, I was about to give up on this version, thinking this was the bug that breaks the game. The Pegasus Boots worked.
