You already proved yourself incorrect by browsing the 3dcg tag. All those games have a tag that is not in the suggested list and that has no description.

This is an US based site. Parts of it are available localized, but there is no system of localizing game pages and community is still in English. You asked on English speaking community forum in English. And in English you got answers. Also English is not my native language either.
And you still teach me the language? What is 3D anyway? Literally three dimensions. Is there a third dimension in flat visual novels?
You seem to have a need for it. 3D is short for three dimensions. So far so correct. But the tag 3D is not the same as the abreviation 3D. It is whatever people use it for. Cinemas use the same abreviation for stereoscopic movies. Are the 3d games you are looking for in stereoscopic vision? Context is important. Context here is a tag and its usage. And there is a difference if you use classic "drawn" characters or 3d rendered images, even if the game is "flat".
You can suggest a different usage, but as you yourself already noticed, it is impossible to convince all the developers to change their opinion about the meaning and usage of the tag 3d, so they would migrate to use 3dcg for flat images.
It all boils down to the statement several people told you: devs chose the tags. It is all there is to it. You can complain and be annoyed by it. But neither you nor itch can change this. Oh, sure, in a trivial sense, itch could overhaul the tagging system and radically change it, but this is not gonna happen anytime soon. They might switch to a predefined set one day, who knows. But I doubt it. There are even tags for som jam participiants.
So words are not important? I can attach any tags to my game, the most popular tags, to attract attention, and no one really cares if I blatantly lie?
Tags are not words, they are tags. And delibaretly spamming tags is discouraged.

The important word here is "unrelated". 3d is related to visual novels using 3d rendered images.
Are you saying that tags are added by developers (1)? You are blatantly lying (2)! If this is the case, then why are these tags not in the tag list (3)? I checked all the pages!
(1). They are selected by the devs and any tag can be selected, even one that is not in the list or does not exist yet. Yes. This is so. You can browse ANY tag and will not get a 404 error message. This is an open tagging system. It has advantages, it has disadvantages. You can think about this whatever you like, but this is how it works on itch.

(2). Quit your insults. I am not at fault for you not understanding or believing what was told to you.
(3). I do not know and I do not care. But it does not look like an automated list. Probably a site admin curates the list from time to time. The tags on that list are sometimes called suggested tags.
I suggest you use the feedback button on the left side of your profile. If you do not see it, change the zoom level of your web browser. Tell itch to change the see all tags button, because it is misleading. It should read, see suggested tags or something like that. It made you think that "all tags" means that it will show exhaustivly all tags. It does not. It only shows this list of whatever they call it internally. Maybe suggested tags.
There are serious problems and pitfalls with the tagging system here. But you can find interesting games, if you see an interesting tag on a game you already found. The game info box will have links to those tags. That is how I found out, that the list is incomplete and you can write and guess any tag. Like the banana tag.
But I do not consider the usage of some popular tags like 3d to be an issue. If we start to open this can of worms, you can complain about half of the horror games here. The horror tag description is wrong to begin with. But, well, horror here is used for some jump scares. Meh. Whatever.
Oh, and not even with a closed tagging system as on Steam you will get all "3d" games according to your defintion with a catch-it-all tag. So just use the common tags used usually for this type of games. There is no single tag that will be used for all of them.
That stuff is really hard to translate. Try using the output of the translator as input and do it again to see how funny some things read after translation. I know what you meant, but the translated stuff was just garbage.
It is an advantage to have a few tags that are seldom used. Like 200 games. You are linked by the other 199 games via the game info box. And competition against 200 games is different than against 5000. I found many games this way. Just look at 3dcg as an example.
