There will be points where characters ask to define the relationship, but until then (and even after) you can date/sleep around to figure out who you're most feeling. There won't be any poly romances because there are so many choice variants that I wouldn't be able to keep track of them. But becoming a couple with someone doesn't mean you'll have to be sexually monogamous. It depends on the guy whether or not they're cool with being open.
