Thanks for your feedback! Originally a combat was planned between the party and the sorceress before you can convince her to free you, and perhaps that'll return in the future. The Enchantress is planned to return to the main storyline in the future, but not for a long time yet.
I believe I have seen some of those topics shown below in years past!
There is a long-planned quest that involves traveling around hunting down escapees from the prison who stole a bunch of transformation potions from Glabbardot. The Warden will be the main contact for that one. I don't have any specific timelines for that quest since the main work now is to get the third companion Aros Starchime into the game.

As for the full game release, that's very hard to say. Quest-wise I've barely scratched the surface of the story I want to tell in the main campaign, and there are a lot of battle mechanics I want to add in and rework. I am hoping to have it for sale on Steam by summer or autumn next year if at all possible.

I've actually had a lot of players say the game heavily encourages ranged units. Archers and spellguides don't have the ranged cooldowns that musketeers and other black powder weapons do, if you're looking for ranged options with can fire more reliably and with better accuracy, though with less damage.
As for the transformations, the player and companions get more flexibility than followers do. You absolutely can be a slimegirl with a gun, or (soon) an automaton that does lust damage. Followers were made to be disposable and hands off so you don't have to always be equipping or unequipping them, or worry whether their base form aligns well with their current transformation, etc. Maybe this will change in the future, but the intent is for the player to focus more on their own character and the two (and soon to be three) Companions.
Have you completed the Journey into the Ashes quest? Events early in The Bimbo of My Enemy refer back to prior events with the Redemptors faction so that is also a prerequisite. (I need to fix a bug where the map connectors are showing up when they shouldn't be that can lead to some situations like this.)
There are some actions you can do like dismissing followers or transferring them out of the party that will create some debt, even if you have the money. The debt will be repaid the next morning. This was done so the player wouldn't immediately get stuck in a trap of "I can't fire anyone or move them out of the party because I can't afford it right now".
Debt also accumulates if you can't cover followers' daily wages in full at the start of the day, but that doesn't sound like your scenario.
Carrotlot is in the middle of Cat Eye Island, just south of Whitetail Watch. As for the sites in Vyndaii's quests, keep searching the unknown map markers while Vyndaii is in her base form. Examining a site removes it from the list of places to look, so you'll run out of locations in Greenridge Valley to check eventually.
Glad you like it! I haven't really put any time into anything like that since the game is still very much actively changing, and new forms are being added in all the time. Any comprehensive guide or lists would quickly become out of date. Generally you can see what's been added in the patch notes, however, which go back about 3 months.

There is a way to prevent yourself and followers from being under Hatfellow's control when you confront him if you search the mansion and discover Lezza's Potion of Mental Preservation that many players miss. Make sure you read books you pick up in this game as doing so can advance quests, teach potions, and more.
