Could you explain in more detail what happened and where and how you are stuck. How excactly did you get softlock? And what did you do to make it happen?
If you should be completly stuck without backup, I can offer to fix your save file.
It's a glitch, I definitely fixed something like that it in the past, just can't remember which version it was. Which version are you playing?
Also it should not be game breaking, after defeating 8 enemies the quest should still progress, so it shouldn't be a softlock. Feel free to keep me update if you think you are stuck. I also always could take a look at your save, in the worst case!
I think only two more, the ones from the final dungeon. There will be some sort of hidden gallery to look at some special stuff and it will only be possible to replay all bad endings but nothing besides that.

Yes and No, it depends on the difficulty. On easy, i dont think she does. On normal she does at 25% HP remaining. And on hard she does it at 50 or 75% hp remaining if i remember correctly.

As for your question: I would say the recommend level is around 30 to 35. Most of the dungeons can be done in any order but that one is considered one of the later/ harder ones. So good job on beating her with only level 25! She definitely has some hard hitting attacks. The first insta kill attack she uses in the first turn is more like a puzzle or gimmick. The intended solution is to use a skill that gives "Withstand Lethal Dmg" while having a high hostility on the character who uses it. Some skills that can lower her accuracy also can help a lot.
You need to buy the piece of land (Forest Home) from the store in the eastern part of town as well as the lake expansion. Visiting that small lake, you can bath there and have the option to use the Shampoo.
You may have seen some smoke, cloud thing in the area you would not interact with yet. You need a certain ability to find it. A ability that can track senses. I hope this helps, feel free to ask if you still have trouble with it!
1.0.4 has more bug fixes and stuff while also adding some more content and quality of life, there is a bit more content but it mainly will add the final dungeon and boss as well as all the endings, so you could just wait until full release later this year.
Also saves can be transfered to newer versions, this also applies to the public full release of version 1.0 as well^^

Sure, most of them are in the same area as the transformations themself. -Fox is in the forest of begining, the hardest one to find if you ask me. It has to do with the red gates you can find in the forest. -Wolf may not be in the public build yet, can't remember if it was added in 0.9 already but it also is the shortset one of all of them. If it is already added, seeing it only required to lose in the wolf story where you need to hold out against the time. -Skunk is in the desert, you need to repair the broken key for accecing that area. -Demon is in the Cursed Coin quest, it can only appear if you do that quest "too early", because of taht it is easy missible until full release. -Also forgot that rabbit also has one, can be found in the rabbit burrow.
All bad endings are: Mouse, Cat, Dog, Fox, Wolf, Rabbit
Other bad endings: Chicken, Skunk, Demon
Wolf and Demon endings are missable if you play on the current public build, will change in full version.
The stone just decreases dmg taken not nullifies it. One and a half minute are probaly more than enough with just a bit of luck, you just need to find a key and the entrance into the ruin, afterwards there is no timer anymore
Both heat and could dmg can't be completely nullified when you enter them the first time. So you need to find and/or buy clothes that help you keeping the heat/cold dmg minimal.
For the winter region you will need a transformation you can find in the south-western plains, Clothes that protect against the cold also help.
As for the desert, it can be visited any time but I would recommend clothes that protect against heat while traveling it. There is also a Varia Potion in town that temporarely reduced Heat and Cold Dmg taken.
Currently there is no discord server, simply because I don't really have the time to moderate one and also am not too knowledgeable about how to set one up etc. Maybe there will be one in the future but at least it is not planed at the moment.

Rabbit currently is the only party member with a transformation. So you not missing them.
That are is a secret area and 100% completely optional to the game so i wont spoil the answer. But for a hint: With a bit of "luck" a npc in the snow town might give you a nudge towords the solution
