My bad I didn't see your comment earlier, Crystal is a gameboy color only game so you'd have to use the other one https://lesleyrs.itch.io/web-gbc. The reason why I also have regular gameboy up is for the ability to use palettes in games that support both GB and GBC.

I got borderless fullscreen working after changing Windows scaling from default 125% to 100%. So that means borderless fullscreen doesn't work out of the box on Windows default scale, those scaled resolution values get in the way for games I think.
Edit: found a solution https://www.reddit.com/r/buildapc/comments/pnjkcj/does_window_scaling_to_125_aff...
The mouse problem doesn't seem to be related to fps, I checked and got consistent 125. The sensitivity fixed itself after going into the desert and from there keeps working.
I'm using windows 11 haven't tested on 10 yet, I just know that if a window covers the full screen it'll override the task bar. Not sure if it otherwise could on w11.
Is it possible to display the fps ingame? I wasn't able to tell if the sensitivity problem happened due to frame rate or something else, but the fps seemed consistent.
I played for like an hour, and it was great. Some feedback:
1. the first part of the tutorial where you have to sneak past the guard was quite hard, almost made me stop but it seemed to work when taking a break in the shadows and running the last bit
2. pressing e should probably put you on pickup all by default instead of exit for convenience.
3. there should be some delay between eats, as everything is really strong you want to spam press eat but it eats all at once. Or maybe better option would be letting the highlighted item (1-4) be used by just pressing once.
4. the mouse sensitivity on windows seems to change randomly in the game, would be preferable if you could attack and examine with keys instead.
5. when setting the game scale to 2 it goes behind the task bar on windows, alt-enter shortcut for a borderless fullscreen would be nice, the one that doesn't force resolution change but goes borderless and just resizes window to monitor size. On opengl this causes some flickering at the monitor resolution but with software it doesn't (tried on sdl2). I believe this would make it cover the task bar. Without game scale at 2 the text is too small (I know it's visible in the terminal).
Good luck on your progress!
