What platforms like Google or Apple advise is that, even if your game is not aimed at children, you should set up a validation for cases where children might still be inclined to interact with your game.
What Easy Coppa does is that is gives you a mechanism where you can show a dialog to explicitly state the player's age so you can decide how to react to it.
In many cases, mostly in EU, it is considered that a single checkbox is not enough to be considered a conscious player input, even less if it is checked by default. An input field, be it text input or age dropdown, as it is the case in Easy Coppa, is usually preferred.
