Something similar happened to me in a previous version. But I think it was my computer not the game. So... I don't know.

One thing I was doing wrong (maybe I was the only one) is that I was left clicking when the bobber went down those first times, when it goes down and comes back up very quickly. Then I realized that you're supposed to wait, it does that a few times and then it remains under water for a longer time and that's when you left click. xD
I did have the tiles tilled before the patch.
I did have things planted before (in the previous versions).
I can water and dig them. That was what I did to solve the problem actually. I used the shovel on the same spot 3 times I think and now I can plant. Sorry I hadn't check that before I wrote the comment.
About the stacks no rush. It was just a thought.

I'm playing in verson 0.16.3.
I have a few tilled spots (3 or 4) and I can't plant in them. It's not a big deal, but just to let you know.
I don't know if I can explain the next one... I went to the mines and brought back a lot of stones. I had, let's say, in one chest 120 in one spot and 100 in another spot. I bring 100 more. Is there a way to complete the 200 stones in one spot of the chest (other than clicking 80 times)?
I was playing in version 0.16.1. I took my axe to upgrade it to bronze axe. I updated the game to 0.16.3 (while I was waiting for the axe to be ready). And now my axe is gone. I don't have it. The blacksmith doesn't have it. I even played a couple more days just in case and nothing. (I checked all my boxes at home).
The only tool I had with me was the pick, so I don't know about the rest of them. If it happens again I will go home and check the rest of the tools also. I had ores, bars, stones and a flower in my inventory.
Also it was the first thing I did that day, go to the mines. I didn't even have to use the watering can before because it was raining.
I exit the game and when I loaded again everything worked well so... I don't know.

Based in what you wrote then I think it was my computer that froze not the game.
I understand what you say about saving. No problem. Maybe it was evident to everyone that the game saves the progress only at the end of day but it was not to me.
Similar to that (not been evident to me) I thought nothing in town was part of the game now, but later I was walking around and saw some parts are available. And the quest button been white (or gray, I don't remember) made me think that weren't available either. But I think that's just me.
I really like the game. Great work!
I started playing a few times and I didn't see any option to save the game (not in the settings menu, not when my character was going to bed like in stardew valley) and I almost quitted. I'm glad I didn't. Now I know the game autosaves at the end of every day. Maybe you could add an option to save the progress? (or maybe there is a way and I didn't find it).
Also I was walking around (it was raining, about 2am) to the east of some chapel or something and I pressed m to check the map and my game froze. I don't know if it was the game or my computer.
